The hump is fat, not water. What lets a camel go a week or more without drinking is a tolerance for losing a quarter of its body weight in water, oval red blood cells that keep flowing when the blood thickens, and very dry droppings.
Then it rehydrates faster than anything should. A thirsty camel can drink over 100 litres in about ten minutes without the cell damage that would do to most mammals.
